Healthy Soups for the Summer

Here are two super easy vegetable based soups (well tomatoes are technically a fruit) to beat the summer heat. Nothing like something light and healthy to make the sweltering days feel better!

Roasted Tomato & Basil Soup

Ingredients

450g vine on tomatoes
1 large onion, diced
1 cup water
1 tsp dried basil
1/2 tsp sugar

1. Drizzle the tomatoes with olive oil and season with sea salt. Roast for 45 min at 170 deg until it splits and starts to break down. Leave aside to cool and then remove the skin.
2. Dice the onion.
3. Sauté the onion till brown. Add in tomatoes, about 1 cup of water, 1 tsp dried basil, 1/2 tsp sugar and simmer 15-20min till flavours develop. (optional: 80ml red wine)
6. Blitz the soup in food processor or a handheld blender till smooth.
7. Season to taste.

Carrot Soup

Ingredients
3 large carrots, chopped
1 large onion, diced
optional: chilli

1. Saute the onion (and chilli if you like it a bit spicy like me).
2. Add in carrots and saute for a few more minutes.
3. Add in about 1.5 cups of water and boil carrots till tender.
4. Blitz the carrots in a food processor or a handheld blender till smooth.
5. Season to taste.
