Smoked Salmon and Cream Cheese on Rye Crispbread

Sometimes the hunger pangs strike in the afternoon when it’s still too early for dinner, but waiting till then isn’t an option as you’re starving. What you need is a snack!

With the leftover cherry tomatoes and lemon from my Garlic Prawn Spaghetti, I decided to make a simple afternoon snack out of smoked salmon, cream cheese and rye crackers. I get hungry pretty easily and these little babies are just the thing to tide me over till dinner. The full fat cream cheese nicely balances the savoury smoked salmon and the flavours are rounded off with bright notes of lemon that shine through the roundness of the fat from the cheese and salmon.Le Roule Cream Cheese

I used Ryvita’s dark rye crispbread and Le Roule Garlic and Herb Cream Cheese which I got from the deli counter at Waitrose. I find it much more flavourful than Kraft’s Philadelphia Cream Cheese.

Rocket leaves
Squeeze of lemon juice
